What is this removable bar for in the trunk?

I don't know your answer, but I looked at the other DSE pictures of his car and those guy's make it look easy. That is some awesome work those guy's do.

Something for the trunk monkey to hold onto during cornering?

I haven't talked to them about it, but I assume that is for the removable bar when not in use. If people ride in the back I can remove the bar and have a place for it.
