Problem with a lot of the mesh screens is they are loose strands and once you cut it sort of falls apart. They also sell a nice aluminum expanded metal with a nice satin finish.
Did a 68 Bird where I simply cut front "Beak" as you put it directly down the center and removed about an inch and the simply rounded it off and welded it back together. Looked better than stock and most had to look 2x to see what was done. Sorry no pics car has been long gone.
