Default Sound Deadening

I know this topic has kind of been beaten to death but after doing a search and reading a few other websites I still have a few questions. I'm in the process of restoring a 1972 Firebird which interior wise will be mostly stock. I'll upgrade the stereo to modern day technology but I have no plans of putting subs or anything of the sort into the car, I doubt the stereo will even be used very often. However, I want as a little road noise as possible on the inside with virtually no rattles like a modern day luxury car.

I've decided to go with the RAAMmat BXT and the ensolite foam after reading a lot of reviews. My question is where do I need to use the ensolite? I'm planning on putting the mat everywhere including the roof and inside the door panels. Also is it necessary to seal the door panel off and add multiple layers behind the speakers? Most of what I read suggested doing this but most of them seemed to be for those who were installing the material for the audio benefits and enclosing the door panel acts similar to a speaker box then. I'd prefer not to seal it off in case I need to access anything behind it at a later date to repair something with the window mechanism or door locks. Any help would be greatly appreciated and I may have a few more questions later after I do some more reading too.
