You can get flat/semi/satin powder coating.

Paint the trim to match body color no problem. During the cut in phase your painting under the trim pieces. Then install the trim when your ready to seal/paint the car. Just tape off the glass and go! However unless its a black car I do no think painting the trim to match the car color would look good. It would simply look like someone was to laz to remove the trim and did a quick paint job (thats just imo).
