Wanted to try to help shed a bit of light on the gauge side of your questions. In terms of speedometer setup, you'll want to go with an electric version. These are programmable and will talk directly with the VSS (vehicle speed sensor) located in your transmission. You'll want to catch what is referred to as the "high-side" signal prior to the ECU or PCM for proper operation.
Tach signal will need to be achieved with a DIS tach adapter installation to one of the coil pack assemblies on this motor. I can provide contact details for our tech support group who can assist you with the details of this installation.
Oil Pressure, Water Temperature, Fuel Pressure, and Oil Temperature would need to utilize gauge specific sensors for proper operation and accuracy. These are included with the product when purchased. Voltmeter is a simple two wire installation to power and ground.
Fuel level gauge will need to be matched to the sending unit that you will be using in the fuel tank. If you are utilizing the original tank and sender for this car this should be a 73-10ohm gauge. If you are utilizing a new or different tank design or sender it will be necessary to take an ohm reading from the sending unit at the empty and full positions to determine the operating range that the gauge needs to be compatible with. Another option would be to consider one of our programmable fuel level gauges which allow you to show them and empty reading and a full reading from the sending unit to which they calibrate their scale so long as the resistance range falls within a 0-280ohm scale.
