Flaring stainless is not difficult, it just requires special flaring tools.
The two main flares that you will have to do are 45 and 37 degree.
Eastwood sells a nice kit for flaring 45 degrees for brake line "25304 Double/Single 45 Degree Flaring Tool Set" it works great for flaring SS but I find it doesn't do as nice of a job on regular brake line, my $20 flaring tool that I have for years does a better job for that.
The other tool that you will need to mate up to AN fittings is one that can do 37 degrees flares I found that the "Rigid 377" works great for this.
With regards to bending the tube it is rather easy in the smaller size 3/16 ect
use a hand bender or just bend it carefully by hand,(don't kink it) the larger line takes a bit more strength so hit the gym or use a bender. When you order your line it will come in a roll, you do not need the special tool to unroll it, just take your time and straighten it on the floor or bench.

Just a side not make sure you put the fitting on before you flare its really hard to put on after....lol
