Every sanctioning body will have different rules. Only the faster ones require a cage (most auto-x events don't).
Shaving the door handles would be the biggest one to cause you problems. After all, how are the emergency crews supposed to get you out of the car? Some events (like the Optima one) require turn signals.. some even require a horn.
