Chris I had the same problem on my 72 Camaro. I had to move my wheels in 1 inch to keep them from rubbing the fenders on cornering. I am running 17X11 TT II Americans. And yes I did roll the lips. The tires are 315-35-17 BFGs. I had tons of room inboard as I relocated the leaf springs 6 inches inboard, but I went with the standard 5.75 offset. I could have come out ok running a 67-69 rear as they are 1 inch narrower than the stock 72 10-bolt. I wasnt aware of this fact at the time I was building the car though. So I had the wheel centers cut and moved inboard 1 inch on both sides. Works fine now and looks better on track too!
