What part of SoCal do you live in. If Huntington Beach is close, you can try D&P Classic Chevy. If San Diego is closer, You can try Best of Show Coachwork's. I have used both shops in the last 2 years and would recommend both.
On my 68 Camaro I had Darryl at D&P Classic Chevy (closer to my house) put my shell with subframe on a rotisserie. They trailered it around the corner (3 blocks away) to Media Resurfacing and had them blast it down to bare metal. D&P took the shell back to their place and shop vac'ed all the media back out of the car. I believe they left in on the rotisserie so they could turn it over and blow it out with air and then shop vac it out again. Getting all that stuff out can take a good part of a day. After the shell was free of media, they prepped it, primed it and then sealed it with DP90.
Keep in mind that weather will play a big part on when the car gets brought over to the blasters and then back over to the paint booth.
Also put together a plan of what all you want done. What I had them do while it was over their was tub the rear end with DSE mini tubs, add DSE sub frame connectors and install a DSE quadra link rear end (4 link). I also had them undercoat the floor pans.
