I'd say it has more to do with the anticipated use of the car than on the car make/model. Choose the seat to suit the use, then trim or reupholster it to suit the rest of the interior.

If you're going for a more original or at least period-correct interior without envisioning much actual hard driving use you'd choose the low-backs. For a more modern appearance or any sort of harder performance use, use high-backs.

It's not just 4+ point harnesses that suggest high-backs; a simple chest strap for autocross or (if allowed) entry-level open-tracking wouldn't work at all well with low-back seats.
