I started with a original and complete 1970 Camaro RS. I am also going to give it the full PT treatment (someday when all of the planet align). I don't feel one bit guilty for taking it apart because it's my car and I am building it for me.
You should get at least copies of all the documents if you can. That kind of stuff is hard to come by and would be fun to have for your car no matter how you build it.
There are some other sites that might encourage you to just restore it to original, but I think a lot of the guys here would agree that you should build it the way you want. It is yours, do what ever you want with it. Just post lots of pictures while you do it.
