Don't chance blowing a numbers motor... do what I did when I was tired of babying the original big block motor in my 67 'vette... go buy a nice crate motor.

You can buy LOTS of bolt ons for the suspension and brakes so that's not a big deal - the trouble you're going to have is TIRES/WHEELS... there's just no way to stuff big enough tires under the stock sheet metal.

I just wouldn't go too far with a nice car like you've shown... because if you like 'racing' - you're going to want to beat on it pretty hard... so at some point you'd be better off putting the car back stock and buying some non important Camaro and building yourself a track car.
