While it wasn't exactly done in a Pro-Touring style, my father built this 2-door post car about 10 years ago. It's got about 15k miles on it since then.
It's definitely more of a sleeper, but it has a full aftermarket frame under it with all of the amenities (AC, Cruise, CD changer, etc).
