I always use the blue tape. You just have to buy it with low adhesion.
I'm sure you remember me using the painters plastic when I initially built my car. That worked out perfect. Just make sure the paint in clean before laying down the plastic. That or just put the first scratch on it in the garage to get over that perfection feeling. haha
