JIMHO -- Make the splatter guard sit in slots so it's QUICKLY removable. Everything you do will have you bolting and unbolting the guard.
BTW.... Just poking you here 'cause your work on this project is killer nice.... what's with the masking tape holding the cover plates. Dude! You have enough clamps that you could have held 'em on there hot rod style!
