If they don't fit under the steering column one can mount the reservoirs remotely via braided steel lines; however the master cylinders themselves must be by the pedals. 
 
This is my old race car that runs a Tilton pedal box ($$$) with the reservoirs mounted on the dash for easy access.  The entire chassis was powdercoated inside/out.  Mazda RX-7 with 438ci LS7, GForce GSR dogbox, 8.8" IRS rear, 2400lbs.
