Because it may not be necessary. My diff temp gauge will tell me what I need to do.

I like to add things only if necessary... you know, like a big SB2.2 engine.

Does that cooler get much airflow? Tucked up against the gas tank like that, it's hard to see how much air would get through the fins? Or is the cooling in this case less about flow and more just about surface area to dissipate the heat? You aren't running a temp gauge on the diff, are you?
I can't see why one would install a system like this and not monitor temps. I'll surely run a diff temp gauge.
