Also is there an option for fuel rails except the Edelbrock ones, the brackets that hold the fuel rails look so cheap.

Also which injectors to use, will the 42lbs be good or do I need to go to a bigger one, maybe 60lb

I did a similar build using a sleeved LS2 block (427") with LS7 heads, FAST 4-barrel TB, GM LS7 single plane intake, FAST 58 lb injectors, and a GM ECM. If you click on the link in my signature there is more information on the build. The port fuel injected single plane intake works well, and drives fine on the street. GM performance makes a single plane intake for LS3 and LS7 engines. The GM intakes are just a bit lower profile than the Victor Jr.
I was also looking for the retro look of the single plane versus using the LS style intake. Good luck with the build
