The issue isn't typically with rubbing the wheels against the body, it's with rubbing the tires. When you go to squeeze a 19x10 wheel under a '69 Camaro, the assumption is that the car is going to be lowered and probably running something around a 26-27 inch tire diameter, so something along the lines of a 285/30R19. Even with perfect backspacing, most cars are going to have enough movement in the rear suspension that rubbing will occur.
If your goal is to not have any rubbing, you either need to choose a more appropriate wheel/tire size and/or mini-tub the car IMHO.
