Because the vehicle is being packaged around the V8. The V8 has four cylinders longitudinally. I6 obviously has 6. Adding a clylinder to the length of the engine automatically pushes everything forward 100mm which means the I6 would move everything forward 200mm. This of course must be made up in either the wheelbase of the vehicle or it's front overhang which eventually impacts the vehicle's overall length. 200mm might not seem like much but you add that to the concept vehicle in the wheelbase or on the nose and you're going to notice it right away. It's a safe bet that that wouldn't fly with Styling.
