Oh, by the way, I have a minitubbed 67 and my rear wheel is 11 inches wide with stock width rear end and 6 7/8 inch backspace on the wheel.

You need to figure some clearance for the sidewall of the tire. Look at the section width of the tire you plan to use. Subtract your rim width from the section width. Half of that number will be how far the tire will stick out from the wheel. Keep in mind that there will be some sidewall flex on cornering.
