Just running some quick checks:

3.25 Rear Gear
Cruising @70 is 2000-2100rpm
Cruising @80 is 2300-2400rpm
Assuming you rev to ~6800rpm; it'll do 175mph in 3rd (1:1 gear)

3.50 Rear Gear
Cruising @70 is 2200-2300rpm
Cruising @80 is 2500rpm
Assuming you rev to ~6800rpm; it'll do 162mph in 3rd (1:1 gear)

Not TOO different between the two gears, only 100ish rpm at cruising speed for either condition.

You make a good point on big torque and power, but unlike a turbo car, you dont need to load up the powertrain to make boost, take advantage of the mechanical advantage of gearing if possible. Can you live with the higher RPM highway speed knowing the difference isn't, to me, that significant.
