AFR and TFS are both top choices (the others I'd put in that category are ET heads). You'll get some people over on LS1tech.com arguing strongly for their favorites, but in truth you're unlikely to see more than about 10 HP difference between them with all else being equal.

I have AFR 205s on my 5.7L LS1, with cam, headers, roller rockers, FAST 90MM intake, and it made 453 HP at the rear wheels with a conservative tune, and very mild idle and drivability. Tony Mamo at AFR has spent a bunch of time working out cams for various LSx combos with his heads, which is one advantage to working with them.
