Your questions are best answered if you post them in the LSx forum, but here are my answers/opinions:

-Yes, that motor will work. You will need ECU, wiring harness (either reworked OEM, or from aftermarket companies like BP Harness, PSI or Speartech). You will also need a DBW throttle for that engine.
-Vintage air will be compatible with that motor. You will need to get a mounting bracket that works with your application. You will also need brackets for alternator/power steering pump as well. You can get the entire set up from Holley/Vintage Air/Drive Junky. There are other companies that make the brackets as well.
-You will also need motor/trans mounts, and headers that work for your car. Holley also makes a complete swap package.
-Other items you will need for the swap: fuel tank/fuel lines if yours are original, drive shaft, plus any parts to complete your t56 swap.

I don't know off hand of any shops that does conversions in Houston area. Maybe others can chime in.
