I like the hardware given what you’re doing with the build... as you say, either will look great, but I think the hardware is a nice detail

No Hardware Vote
No hardware is not only cleaner looking imo but also easier to clean... more of a timeless design too.

brushed centers and lips with no hardware for ease of cleaning is my vote. Any of the three designs would look good.
