Treating raw cast Aluminum intake, RainEx or...?
 
Some old timer told me that prior to install, treating a new cast aluminum manifold with several applications of Rainex would supposedly keep it from getting oil/fuel stained.

I don't want to polish it. Looking for low maintenance.

what do you guys think, or use / recommend?

On Mary's first engine, the 383, I sprayed some clear coat on the Edelbrock intake. It darkened it a little but it doesn't absorb oil or dirt like raw cast does. I did the cast wheel centers too because they really get coated with brake dust. I did light coats of clear, didn't build it up too heavy because I didn't want the aluminum to have a clear coat shine.

What about using Sharkhide, that should keep it protected and not change the original color.

The old guy is right about Rain-x. You can also use any number of spray on clear coats. Test on another part with fuel before you commit.
