I agree, I enjoying seeing the craftmanship. Seeing something, anything, go from idea to completion.
Back when American Chopper was hot, I really enjoyed seeing what
Nub came up with for paint and the processes he used for different effects. He's insanely talented. I would love to see a TV show just following him around, showing how he goes from talking over a project in the office to the final product coming out of the paint booth. That goes for any great craftsman and shop - many of which you mentioned - would make for a good show. There's soooo much more to building a car than how fast you can assemble it.
