I'm a fan of functional modifications over bling - AC; interval wipers; windshield washers; really good seats; sound system (maybe with blue tooth); exhaust system that won't drive you crazy when you drive the car 10 hours in a day; camber correction for the front end; solid body bushings; delrin/del-alum (or equivalent in aftermarket arms) UCA/LCA bushings; upgraded steering box; disk brakes front and rear; subframe connectors; good shocks and springs on the back end (I'm partial to composite leaf springs); a gas tank and pump that will reliably supply fuel until it's virtually empty.

Me, I wouldn't "dress up" the LS1 - it is what it is. I'd put the money into something that made the car work better.
