Did not shim the brackets at all, the sound is when you apply the brakes...

Different pads make different sounds depending how aggressive they are, but I don't see them making excessively more noise prior to bedding them in.
Did not shim the brackets at all , just the calipers to center them on the rotor

Get it up in the air so you can see the back side of the rotors - my guess is you have a bolt in a caliper that is up against the rotor! You should see it quickly because it's probably already left a witness mark.
I will check the back side of the rotors, but I did make sure that the caliper bolts were not digging into the rotor when I assembled them. The noise comes on when you apply the brakes. Not sure what to make of the noise...
