I just looked, there's a lot less options for the LS7 unfortuneately, I think the height of the setup you're suggesting will be around 9" for an LS3. If I go this route I'll be using this.

Yes, you turn your throttle body to the horizontal plane. I predict a 10-11 inch height which might not fit but it sure is timeless.
