Default Getting wheels-tires mounted and balanced?

I have my Toyo R888's in 275 and 315 waiting to be mounted to a set of Vintage Wheel Works V40's as soon as they can make them. What questions should I ask a perspective shop to see if they are going to get the job of mounting and balancing done right? They will be going on a track/road car. Any particular type of wheel weight or balancing procedure I need to ask for?

most shops should be able to do it to the point where they will hold air, however your concern would be them scratching/ gouging the wheel. I would look at a specialty hot rod shop or custom wheel place. where are you located?

As far as balancing most shops will use sticky weights on the inside of the wheel when balancing aftermarket wheels. One thing to be cautious of is the sticking weights and your brakes, not a common problem generally but can be with larger brake upgrades.
