Could be a venting issue. Try a drive around the block without the gas cap on it.

Did that at the recommendation of Rick's Tanks, issue still happened. I am also using a stock '55 gas cap. Rick's said that was fine.

I would try and see what the fuel pressure is doing when it happens. Maybe you have a pump going out.

After the engine shuts off, does the car start back up easily? Do you have to wait any length of time before restarting?

Car fires right back up. I come to a stop, turn the key and am ready to go.

I had a similar problem with my LS3. It has been a while but it would just die coming to a stop. I assume you are using DBW? If so that is where I was told issue was Throttle Position Sensor in Throttle body. So I bought TB as that part is molded in on the silver blade TB. The new TB had a gold blade which created other issues. In the end I put old TB unit back on and got a tune after cam swap and problem is gone. Sorry this is not clear answer but it might be the pedal or TB causing you issue.
