x2 on using modern Mustang brakes. I love Tobin/Kore3 and have them on my car. If he has a kit for modern mustang brakes, you can't go wrong.

Mike Maier Inc, https://mikemaierinc.com/, has really great products for the car. I'm helping my buddy with the long term build of his 69 Grand Coupe. He's using Mike's parts and has similar goals as you do. I've been very impressed with Mike's sub frame connectors, x-brace, and pan hard rod kit.
