I think you would make more of an impact if you went with a real color. If the car is going to be sold then some variation of a burnt/sunset orange with a metallic stripe. A variation on the shelby stripe would be cool. You want it to "look" factory, but be custom. That way is won't look dated down the line.
If I had a nickle for every silver/grey shelby stiriped Mustang I've seen.. It's a "safe" color but not a very exciting choice.
