I typically set ride height at a bit over half travel...in your case around 14.5-15".
Our 5.2" stroke shocks are just a tick shorter...11.25 compressed and 16.5 open, so you could run them around 14-14.5" at ride height. http://www.ridetech.com/store/coil-overs/
