Why are you still having trouble with the shocks bottoming out, I thought that this area had been addressed by "punching the holes in the trunk & welding in extenders"? Does this mean that you're changing from the Bilsteins to Penske shocks now? If so what's wrong with the Bilsteins? How much shock compression/travel are you getting with the set up as is? Could it be that your spring rate is wrong allowing an excessive amount of spring compression? Sorry for so many questions, but I'm sure that those people that are following this, wouldn't want to copy your set up & find it falls short of what they want, just as you have.
