Don't be afraid to run adapters. They are plenty strong enough for anything you're going to do. I would not use spacers though.

One thing that might help is to print out a fitment template and then hit up a junk yard and go through the rims they have. 18" rims are common enough now that you should be able to find something you like. You might be able to find a template on various vendor's websites that offer the F-body brakes. I know Kore3 has one for the C5/6 brakes. I'm not sure about the Fbody brakes though.
