Default Max acceleration with 17" or 18" drag radials

How do you determine when a car is accelerating at its fastest?

Correct me if I'm wrong, but wouldn't it be with some kind of G meter that measures G force. If the max G's with larger diameter drag radials is .7 g's(I saw in an article that a twin turbo viper maxed out at .7 g's), then wouldn't the goal be to try to stay at that number for as long as possible.

The reason that I'm focusing on the tires and G's is when a car starts out in 1st gear, the transmission amplifies the tq depending on the gearing, rear dif ratio, and tire size, so that my 1st car a 62 vw with 40 hp could spin the tires in 1st gear. So up to say 100 mph many cars can spin their tires.

So, traction is the limiting factor at lower speeds even in cars that aren't super powerful. So, whats the best way to get the most acceleration at lower speeds? Sorry for so many words?
