Don't know who the "big name guys" are, but that's BS as long as you have the right engine mounts, frame stands, and headers.

I'm running a big block 396 in my '69 Camaro with Hooker Competition headers (2" primaries) and the complete factory A/C set-up. Dropping the engine in was a real pain in the @ss, but even with the these large primaries I can still slide my hand between the header tubes and the suitcase.

Some headers may be specifc to A/C applications (as well as power steering), so just make sure that the right parts are being used (i.e. mounts, stands, & headers).
