Those with LS conversions: What kind a of coolant temperature are you seeing?

As the title says would like to know what you guys are seeing. I ventured out for a little spin around the block and noticed the temp hit 220ish. I pulled over and shut it down. The fans had just kicked on around 210F I think.
I did want to let it run more to see if it came down. Looking at the vette forums this sounds normal but it seemed high to me. If this is normal what is high?
For the record I am running a LS3 with Ron Davis LS radiator with dual spal fans. I guess I need to see what John @ Speartech configures the ECU.
I also have no idea what thermostat I have.
