Default Valve Cover Clearance

I have a problem, I ordered the GM Performance 12480127 valve covers to go on my 327 w/roller rockers, and of course the baffle seems to hit the rockers. Even with the rocker horizontal and neither end at the apex of its lift the cover looks about 2 inches too short.

I thought about grinding off the baffle, but then if I install grommet and push a breather into the opening the breather would possibly hit the rocker, no?

The problem is GM does not make this valve cover in a tall version and have the same finish, the tall ones all seem to be powder coated. I was trying to keep the engine looking black, and aluminum.

Any suggestions on how to proceed, or ideas for valve covers would help, thanx!
