It sounds like you're moving over to 17" wheels/tires no matter what, so my suggestion would be that you run it with the brakes you currently have and see how you like it. Aesthetically, larger brakes will look better, but whether you need the additional brake capacity or not remains to be seen. If you find that you're repeatedly pushing your current brakes up to and beyond their capabilities, then it's time to upgrade. The more aggressively you drive, the more power you have, the stickier the tires you run, the more demanding the roads/track, etc, the more larger brakes will help, but it's all relative.
Otherwise, if you want larger brakes then I would suggest you max out what you can fit inside a 17 and go 12.8 to 13 inch diameter on the rotors, thickest you can find, probably 1.1 to 1.25 inch. If you're going to do it, do it right IMO.
